Our History

Chelsea Chocolates is a family-owned chocolate shop proudly located in the heart of Craighurst, Ontario. In February 2025, the business welcomed new owners Colin and Georgann Gilchrist, along with their daughters, Nora (10) and Zoey (8), who are excited to add “chocolate makers” to their resumes.

Colin and Georgann are deeply committed to honouring the legacy of Chelsea Chocolates while thoughtfully guiding it into its next chapter. Their focus is on preserving the handcrafted quality, time-honoured techniques, and premium ingredients that customers have come to love, while continuing to create warm, memorable experiences for both locals and visitors.

In addition to Chelsea Chocolates, Colin and Georgann also own and operate Coldwater Ice Cream in nearby Coldwater, allowing them to continue supporting and investing in small-town businesses and the communities they serve. Together, their family looks forward to sharing their passion for artisanal treats and carrying on the tradition of excellence that defines Chelsea Chocolates.

History

Chelsea Chocolates was founded in 1995 by two friends, Gail and Sharon, who shared a passion for creating truly “melt-in-your-mouth” chocolates. From the beginning, their focus was on using fresh cream, butter, high-quality ingredients, and the finest Belgian chocolate to produce exceptional handcrafted confections.

In 2010, Chelsea Chocolates was purchased by John and Laurie Thompson, who continued operating the shop in Craighurst, Oro-Medonte, just outside of Barrie, Ontario. While becoming small business owners brought a steep learning curve, it was also a time filled with excitement and growth. Over the years, John and Laurie expanded and refined the business, always staying true to its commitment to quality.

In 2020, John and Laurie decided it was time to retire and move west to be closer to family. In September of that year, they met Dan and Kathy Barber along with Megan and Jason Leigh, who immediately felt a strong connection to both the business and its owners. The transition began soon after, and ownership officially changed hands on January 1, 2021.

The new owners remained dedicated to continuing Chelsea Chocolates’ proud tradition of crafting handmade Belgian chocolates, built on quality, care, and consistency.

Today, under the stewardship of the Gilchrist family, Chelsea Chocolates continues its journey with the same great chocolate, a deep respect for its past, and excitement for what lies ahead.
